Walk through the montado, the cork oak landscape that defines the Alentejo.

Cork, Wine and Olive Oil
Watch the ancient stripping of the cork oak: extractors with axes peeling the bark by hand, one plank at a time, without ever cutting the tree.
The story
Once every nine years, in the heat of summer, a cork estate comes alive. Teams of extractors — a craft passed down through families, with no school to teach it — walk the montado with axes and sheer strength, splitting the thick bark along its fibres and peeling great planks from the trunk in one clean pull. The tree is never wounded; the fresh orange trunk is simply left to rest and grow a new skin. Guests walk with the foreman between the work, hear the crack of the bark, feel the weight of a fresh plank, and learn the painted numbers that mark each tree's harvest year. Lunch follows in the estate's shade, with the planks stacked and the plains glowing.
The day
Cork is harvested from living trees that are never felled; each oak stores carbon and keeps absorbing it after every harvest.
