Cork, Wine and Olive Oil
Walk a morning on the silent plains with a shepherd and his flock — no roads, no crowds, only cork oaks, sheep bells and footsteps on dry earth.
The story
There is a part of the Alentejo where time does not hurry, and it is best entered on foot, behind a flock of sheep. On this morning, guests join a shepherd as he leads his animals from the pen out onto the open montado — a landscape of stone walls, old cork oaks and golden grass with no traffic, no machinery and hardly another person in sight. The pace is his, and it is slow. The only sounds are the bells on the flock, the dog working quietly at the flank, and the wind in the oaks. He shows how he reads the land: which grass the sheep want, where the shade will be at noon, what the sky says about the afternoon. By the time the morning ends, with bread and cheese in the shade of an oak while the animals graze around, most guests say the same thing — that they cannot remember the last time they heard so little, and felt so restored by it.
The day
The morning is travelled entirely on foot, following a shepherd whose family has worked these plains for generations without motors or machines.
